A Mini Union Market is Coming to Brentwood

An artisanal food hall will open in Brentwood later this summer.

Located on the ground floor of an upcoming apartment building, Savor at Studio 3807 will feature several up-and-coming vendors.

The concept behind Savor should be familiar to anyone who’s visited Union Market just down the road in D.C., though it will be about a fourth the size.

The 6,300-square-foot food hall will be an indoor market where customers can meet up for food and drinks from different restaurants under the same roof. The goal is to serve as an incubator, allowing entrepreneurs to test concepts with advice on finance, marketing and menu development.

“Our goal is to work with startups,” said Landex Development CEO Peter Siegel, which is developing Studio 3807. “My hope is they get so big and find their own space on the Route 1 corridor and provide more economic development to the area.”

The food hall’s first vendors will be D.C. Sweet Potato Cake, a small commercial bakery; Sauce, a health-conscious spot run by a dietitian and chef that will serve lunch and dinner; Artisan Market, which will offer local honey, produce and jam, among other things; and Commune Cocktail, which will offer craft wine, beer and liquor.

The food hall will be managed by April Richardson, owner of D.C. Sweet Potato Cake and Delectable Cakery, who will also help vendors with business advice.

Siegel said he hopes the food hall will “reduce the barrier to entry” for entrepreneurs.
